Ingredients:
- 4–5 medium tomatoes, diced
- ½ red onion, finely chopped
- 1 jalapeño, seeded and minced (roast peppers if you like less heat)
- ½ cup fresh cilantro, chopped
- Juice of 1–2 limes
- Salt and pepper to taste
Instructions:
- Add the diced tomatoes, red onion, jalapeño, and cilantro to a bowl.
- Squeeze fresh lime juice over the top.
- Season with salt and pepper.
- Stir everything together until well combined.
