Garden Fresh Mediterranean Salad

This Mediterranean dish is a fresh, vibrant salad filled with crisp vegetables, briny olives, creamy feta, and a simple lemon dressing. It's the perfect side for summer barbecues or a light lunch made with ingredients straight from the garden.

From the Garden

  • 2 cups cucumber, diced

  • 2 cups Cherry or Roma tomatoes, halved or diced

  • 1 cup red onion, thinly sliced

  • ¼ cup fresh parsley, chopped

  • 2 tablespoons fresh mint, chopped (optional)

Additional Ingredients

  • ½ cup crumbled feta cheese

  • ½ cup Kalamata olives, pitted

  • ¼ cup extra virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon dried oregano

  • Salt and freshly ground black pepper to taste

Directions

  1. Combine cucumber, tomatoes, red onion, parsley, mint (if using), feta, and olives in a large serving bowl.

  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.

  3. Pour the dressing over the salad and toss gently until everything is evenly coated.

  4. Serve immediately, or refrigerate for 15–30 minutes to allow the flavors to come together.
