Mixed Berry Salad with Raspberry Vinaigrette

This refreshing salad highlights the bright flavors of fresh berries paired with crisp greens and a simple homemade raspberry vinaigrette. It’s a beautiful dish for spring gatherings, light lunches, or as a fresh side alongside grilled meals.

Ingredients

From the Garden

  • 4 cups mixed lettuce or spring mix

  • ½ cup fresh blueberries

  • ½ cup fresh raspberries

From the Store

  • 1/8 cup sunflower seeds or similar

  • 2 tablespoons olive oil

  • 1 tablespoon raspberry vinegar (or red wine vinegar)

  • 1 teaspoon honey

  • Pinch of salt

  • Fresh cracked pepper to taste

Instructions

  1. Prepare the greens
    Wash and dry your lettuce or spring mix thoroughly and place it in a large salad bowl.

  2. Add the berries
    Gently scatter the blueberries and raspberries across the greens.

  3. Make the vinaigrette
    In a small bowl, whisk together olive oil, raspberry vinegar, honey, salt, and pepper until well combined.

  4. Assemble the salad
    Drizzle the vinaigrette lightly over the salad and toss gently to coat.

  5. Finish and serve
    Sprinkle seeds on top just before serving for a little extra crunch.
