Easy Pumpkin Soup
Ingredients
- 4 cups pumpkin, peeled and cubed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter or olive oil
- 4 cups vegetable or chicken broth
- 1 tsp fresh sage, chopped
- 1 tsp fresh thyme, chopped
- ½ cup cream or half-and-half
- Salt & pepper to taste
Directions
Sauté onion and garlic in butter or olive oil until soft. Add pumpkin, broth, sage, and thyme. Simmer for 20–25 minutes, or until pumpkin is tender.
Blend until smooth, stir in the cream, and season with salt and pepper. Serve warm with toasted pumpkin seeds and a little fresh sage on top.
